A grease interceptor or grease trap as it is typically referred to collects and traps everything from your kitchen. All lines that run from your sink where dishes are washed as well as floor drains and mop sinks go into the grease trap. Anything someone puts down these drains will end up in the grease trap. All food, grease, dirt, and grime will be held in the grease trap while the wastewater passes through
the exit line which then goes to the city main sewer lines. A grease interceptor is designed to let all solids like food fall to the bottom with lighter materials such as grease float to the top, with the middle consisting of wastewater. A specifically designed T-pipe is installed just before the exit line to let only water out. Regular maintenance is required to keep a grease trap operating. Negligence will result in a
back up of the lines which will result in either the grease trap overflowing into the parking lot or inside the store, either way, it’s a mess and can be extremely costly. With a regular maintenance cleaning schedule, a grease trap is simply another component of a kitchen.
